Death by Chocolate Chunk Cookies

You guys have to make these death by chocolate chunk cookies, like, right now. Not next week, but now. They’re like brownies as cookies. Super fudgy and ultra gooey chocolate cookies with melted pools of semi-sweet chocolate strewn through the molten dough. It’s insane! You’ll need all the almond or oat milk possible to wash all of these down. Trust me when I say you want to salt these, just to help bring out how intensely chocolatey they are.

The world is super…strange right now. It’s scary, and the uncertainty is giving a lot of people anxiety they’ve never experienced before. Admittedly, the only thing that’s keeping me sane right now is baking. Getting my hands dirty in doughs, watching the clock to track rising times, gardening…it’s all making me happy during this dark time. My diet is taking a comfortable backseat right now, and I’ll see her again soon. But for now, I just want to eat and cook what makes me happy. I deserve it.

Now, listen up!

I highly, highly recommend that you chop up a thick chocolate bar (Baker’s brand) to melt beautifully through the cookies. Sure, you could use chips, but don’t expect those insane chocolate pools. Chips are made to maintain their shape as they bake, so they don’t have a total meltdown like bar chocolate. Any coarse sea salt to top them off would work here, although I also highly recommend Maldon finishing salt. They’re like these beautiful pyramid-shaped delicate clusters of salt that offer the perfect amount of saltiness and just look super chic on your baked goods. 

These ultra chocolatey crazy gooey double chocolate chunk cookies are crazy delicate. With a ten-minute bake time, they need to cool down considerably before you pick them up (at least 10 minutes if possible) because they will fall apart like a bad marriage (but in a good way).

You see those cracks and crinkles on the surface of the cookies? You can achieve that by banging your baking sheet (gently, but firmly) on the counter as soon as they come out of the oven. They split open and reveal that super sexy melty center.

I used a large 4-tablespoon cookie scoop and managed to get about 19 large cookies out of one batch. If you go smaller, you’ll of course get more cookies. Which is not a bad thing.

Description

Insanely rich, ultra ooey-gooey triple chocolate chunk cookies that will blow your mind. They taste like if brownies were cookies. Death by chocolate? Damn right. Slightly adapted from ATK.

  1. Preheat oven to 350 degrees F. Line two baking sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder and salt until combined. Set aside.
  3. In another medium bowl, whisk the eggs with the vanilla. Sprinkle the instant espresso over the top to dissolve, and set aside.
  4. Melt 1 pound of semi-sweet chocolate chips in the microwave at 50-percent power for 2 minutes. Stir the chocolate and continue to microwave at 50-percent until the chocolate is completely melted, stirring after each minute to avoid scorching. Set aside to cool slightly.
  5. Using a stand-mixer fitted with a paddle attachment, beat the butter, brown sugar, and granulated sugar until combined, about a minute on medium-speed. It will look granular, so don’t freak out. Reduce the speed to low, and add the egg mixture. Beat until incorporated, about 45 seconds. Add the melted chocolate in a steady stream and mix until combined, about 40 seconds, scraping the sides of the bowl as needed. With the mixer still running on low, add the dry ingredients and mix just until combined and fully incorporated. DO NOT OVERBEAT! Fold in the roughly chopped semi-sweet chocolate with a rubber spatula. SEE NOTE BELOW!
  6. Using a large (3 or 4-tablespoon capacity) cookie scoop, arrange 6 to 8 dollops of cookie dough onto the prepared baking sheets, leaving at least 2 inches of space between each cookie. Bake the cookies on the middle rack of your oven for 5 minutes, then rotate the pan and bake an additional 5 minutes (total of 10 minutes per pan). The edges should be set and the centers should be very soft. Remove the cookies from the oven and give the pans a gentle yet firm tap on your kitchen counter to crack them open and expose their gooey centers. Sprinkle with flaky Maldon sea salt and let them cool for 10 minutes before eating.
  7. Cookies should be completely cooled before storing in an airtight container. Enjoy!

Notes

If you decide to use bar chocolate instead of chips for the actual cookie dough, you will need to let the finished dough set up for 30 minutes before baking. That 30-minute resting period allows the dough to be scoopable. And while using chopped bar chocolate is perfectly fine, it doesn’t “set up” the way chocolate chips do. I just find using chips make the dough easier to manage without waiting for it to firm up. Also, you can use an additional 8 ounces of chocolate chips to mix into the finished dough instead of chopped bar chocolate. Just know that you will not get the gooey rivers of melted chocolate if you use chips to stud the dough.

If your cookie scoop is smaller than 4 tablespoons, you will still bake the cookies for just 10 minutes only, but you’ll have way more cookies than the recipe originally yields. Not a bad problem, if you ask me.

    I would like to make these keto. I can manage the sweetener swap but don’t know if there’s a rule on swapping almond flour for all-purpose. I’ve made your keto chocolate chip cookies and they are super; I doubt anyone would know they are keto. Thank you for any advice you can offer.
